    The Vision

    The Lalesa Processing Station is run by Ephtah Specialty Coffee, a women-founded and led exporter group. Ephtah believes that women are the “under-appreciated pillar” of the Ethiopian coffee industry and strive to help women be competitive and profitable in their work. Lalesa was vacant land when Ephtah purchased the site in 2023, and is now home to a thriving drying and processing station. We’re delighted to bring you this bright offering that supports women in the coffee industry.

    The Process

    This coffee is naturally processed but is dried in a greenhouse, an unusual step that extends the drying time by roughly a week. This produces some of the classic “natural Ethiopia” profile markers that long-time specialty coffee drinkers will remember fondly, while also bringing out new and exciting flavors to expand the palette. We taste sweet cranberries, August’s ripest blackberries, plum, and limeade right at the front. We recommend grinding coarser than usual to prevent choking and encourage the fruity profile.

    Altitude: 2150-2200 MASL

    Process: Natural

    Notes: Sugared cranberries, limeade, red grape

    Notes: Chocolate chip banana bread, dried apricot, peach tea, pineapple acidity

    Brewing suggestions

    Aeropress

    11g coffee

    0:00 → pour 200g water, place plunger in gently to seal

    2:00 → remove from scale and swirl

    2:30 → plunge down slowly until all water passes through, about 30 seconds

    Hario V60

    20g coffee

    0:00 → pour 50g water to bloom

    0:50 → pour 50g water every 20 seconds until 300g
