The Vision
We are thrilled to start our Stay True collection with Forest Coffee, a Colombia-based importer. Working in the same country as their farmers allows Forest to focus on sustainability.
The Process
This Gesha undergoes a double fermentation process, starting with hand sorting and depulping. For the first 140-hour fermentation in GrainPro bags, the mucilage is left intact to enhance floral and citric notes. The second 2-day fermentation occurs in tanks, before drying in the sun for 18 days. Tangerine peel is added to the parchment beds during drying to infuse citrusy, floral flavor.
