This is a washed coffee, but what makes it unique is the "special prep" distinction. The coffee undergoes a standard washing method, with a 48-hour fermentation period and about 21 days of drying (depending on the weather) to reach optimal moisture content. However, the special prep starts in the picking, before this process even begins. The farmers pick 90% of the cherries at peak ripeness, 5% slightly under-ripe, and 5% overripe. These cherries are usually picked all in one single day, and are processed and stored separately from other lots. There are very few bags processed this way each year. We especially enjoy it's white chocolate sweetness that almost comes across as confectioner's sugar, and the taste of a perfectly ripe cantaloupe on a hot day. We are excited to be able to bring this coffee to you!
