Sourced from the volcanic soils of the Chiapas region, this selection is decaffeinated using the natural EA (Ethyl Acetate) process. Derived from sugarcane, this gentle method allows us to hold fast to the bean's inherent character, preserving its delicate flavors rather than stripping them away. The result is a cup that is remarkably smooth and clean, featuring a soft plum acidity and a lingering milk chocolate sweetness.
