This coffee comes to us from Elkin Guzman, the producer and innovative mind behind the El Mirador farm in Colombia. He’s known for pushing boundaries, experimenting, and redefining what coffee processing can look like.

From our importer: “The coffee is harvested, sorted, and depulped the same day that it's picked. The depulped coffee is dry-fermented in open air for 18 hours. The beans are then put in covered tanks to ferment for 24–36 hours, with molasses added to the beans to provide "energy" or sugars for the yeasts and bacteria to break down."

We taste peach, black tea, and honey. This is a light, delicious coffee that we love on pour over.
