The coffee undergoes a standard washing method, with a 48-hour fermentation period and about 21 days of drying (depending on the weather) to reach optimal moisture content. However, the special prep starts in the picking, before this process even begins. The farmers pick 90% of the cherries at peak ripeness, 5% slightly under-ripe, and 5% overripe. These cherries are usually picked all in one single day, and are processed and stored separately from other lots. There are very few bags processed this way each year.
